As soon as the temperature rises, so does our desire for freshness. . Wine is not to be left behind: it can become the ally of summer aperitifs, light meals and long evenings... as long as you choose it well (and serve it well!).
Serve your wines cooler... but not iced
In summer, we tend to take the bottle out of the fridge at the last minute. A mistake! A wine that's too cold loses all its aromas. Here are some ideal temperatures to aim for:
- Dry whites and rosés: between 8 and 10°C
- Light, fruity reds: between 13 and 15°C
- Strong red wines: between 16 and 17°C (avoid temperatures above this)
Tip: cool your bottles for 15 minutes in a bucket of water + ice cubes before serving.
Choose aromatic, light and refreshing wines
When it's hot, we look for freshness, liveliness and fruit. Here are three cuvées from our estate that are perfect for summer:
AOP Ventoux, Lescale Rosé : Fresh, dry, delicately fruity: perfect for summer salads, light grilled meats or as an aperitif. Notes of strawberry, grapefruit and white flowers.
AOP Ventoux, Lescale Blanc: A crisp white with citrus, pear and floral aromas. Ideal with seafood, grilled vegetables, or simply to refresh at the end of the day.
IGP Vaucluse :A light, very fruity red, to be drunk slightly chilled. Perfect with barbecues, pizza or charcuterie. The perfect companion for relaxed summer evenings.

No, red wine isn't just for winter. By choosing reds with little tannin and lots of fruit, you can refresh them slightly without breaking their structure.
Light pairings for summer meals
Summer dishes are simpler: salads, grilled meats, fresh cheeses, fruit... Here are a few ideas for express pairings with our vintages:
- Tomato mozza salad / AOP blanc or rosé
- Grilled vegetable spread/ Ventoux rosé or IGP Vaucluse
- Fresh goat's cheese/ Ventoux blanc
- Yellow fruit or melon / Muscat de beaumes de Venise
