Winter: Time to rest and prune

In winter, the vine goes into dormancy. Deprived of its leaves, it conserves its sugar reserves accumulated during the previous season, to be better able to come back to life in spring. This is the period when winegrowers prune their vines to regulate future production and prepare them for harmonious growth. This operation promotes the circulation of sap and has a direct influence on the yield and quality of the grapes.

Spring: awakening and flowering

As temperatures ease, the vine gradually emerges from its slumber. The buds go through the "bud-burst" stage, marking the appearance of the first leaves and shoots. This is a delicate period, as spring frosts can damage young buds and compromise the harvest. Flowering occurs gradually, around 8 to 10 weeks after bud burst. This key stage, marked by the appearance of inflorescences and the fertilization of flowers, directly conditions the number and size of bunches to come.

Summer: Grapes are ripening

Under the summer sun, the vines continue to grow and the bunches develop thanks to photosynthesis. During veraison, when the grapes change color, the berries accumulate sugars and polyphenols while reducing their acidity. This is also the period when winemakers carry out strategic interventions such as leaf thinning, to allow better aeration of the bunches and optimal exposure to the sun, and green harvesting, aimed at reducing the number of bunches to prioritize quality.

Autumn: Harvesting and Vinification

When the grapes have reached optimum ripeness, as determined by analyses of sugar, acidity and polyphenols, it's time to harvest. Once harvested, the grapes are sorted and vinified.
